4 Days Later.
Into the 'cave'.So far, the Blue Stilton is looking good. I wish that I would have pressed it a bit more in the molds. It looks a bit 'loose' to me. We'll see. I do like the way the cheese is already starting to bloom. We tasted a couple of bits that fell of and agree that it doesn't taste like much yet. I can taste that hint of blue...can I wait 60 days?
I modified our electric cooler to maintain 20 degrees below ambient (6volts instead of 12 volts). I am already planning a larger cave.
